Rolled Up French Toast

French toast roll-ups are going to become your new family favorite for breakfast and brunch. This is such a fun one to make with littles and Crew was especially excited to wear his new chef coat from Grandma.

They have the same warm, cinnamon flavor as the traditional dish but they’re stuffed with cream cheese or Greek yogurt and sweet berries for more flavor. The kids can grab the roll ups with their hands and dunk them in syrup, for easy indulging!

Why We Love This Recipe

  • Kids Love It: They can help you assemble the French toast rolls and they’ll definitely enjoy eating them!

  • Quick & Easy: With simple ingredients and a fast cooking time, this recipe is perfect for busy mornings.

  • Customizable: Use your favorite bread and switch up the stuffing to make this recipe perfect for your family.

The Best Bread for French Toast

You can use whatever bread you’d like to make French toast roll ups. However soft, thick bread is best because it’s less likely to tear or get soggy. I suggest challah, brioche, or French bread for the best results.

Ingredients

  • Sliced bread: Use sturdy bread because it holds up well to stuffing, rolling, and cooking.

  • Plain Greek yogurt: This adds a creamy texture and slight tanginess; you can also use flavored yogurt for added sweetness and variety.

  • Fresh berries: Use strawberries, blueberries, raspberries, or a mix to add bursts of fresh, juicy flavor that complement the creamy filling.

  • Eggs: Eggs are essential for binding the ingredients together and creating a custardy coating for the bread when cooked.

  • Milk: Dairy helps to create a smooth and consistent egg mixture for dipping the bread rolls.

  • Cinnamon: This adds a warm touch of spice.

  • Sugar: This sweetens the egg mixture and helps make a caramelized crust once the stuffed French toast is cooked.

  • Butter: Use butter or cooking spray to grease the pan to prevent sticking and to give the French toast a golden, crispy finish.

  • Powdered sugar: Powdered sugar is perfect for dusting over the finished French toast roll-ups, adding a touch of sweetness and a nice presentation.

How to Make French Toast Roll Ups

First, take each slice of bread and flatten it out with a rolling pin until it's nice and thin. Spread a thin layer of Greek yogurt (or cream cheese if you prefer) over each piece of bread.

Then, sprinkle a few fresh berries on top of the yogurt. Roll up each slice of bread tightly, keeping the filling inside.

Next, whisk together the eggs, milk, cinnamon, and sugar in a shallow dish until everything is well combined. Dip each rolled bread into this egg mixture, making sure it's fully coated.

Heat a large skillet or griddle over medium-high heat and add a bit of butter or a light spray of cooking oil. Place the rolls in the skillet and cook them until they are golden brown on all sides, turning them as needed. This should take about 2-3 minutes per side.

Once they’re cooked, transfer the rolls to a serving plate. For a final touch, dust them with a little powdered sugar. Serve them warm, and if you like, add some extra berries or a drizzle of maple syrup on the side. Enjoy your stuffed French toast!

Recipe Tips

  • Flatten the bread. Use a rolling pin to flatten the bread slices completely. This makes them easier to roll and helps them cook evenly.

  • Use fresh berries. This provides the best flavor and texture. You can use frozen berries but make sure to thaw and drain them well to avoid excess moisture.

  • Do not overstuff. Be careful not to overfill the bread with yogurt and berries, as this can make rolling difficult and cause the filling to leak out during cooking.

Recipe Variations & Substitutions

  • Bread: Use brioche, challah, French bread, or your favorite thick bread.

  • Flavored Yogurt: Use flavored yogurt such as vanilla, strawberry, or blueberry instead of plain Greek yogurt for added sweetness and a different taste profile.

  • Protein: If you prefer savory over sweet, add precooked, crumbled breakfast sausage and scrambled eggs to the bread instead of fruits and cream.

Frequently Asked Questions

  • For French toast roll-ups, you should dip each bread roll quickly in the egg mixture, just long enough to coat it thoroughly. This usually takes about 5-10 seconds per roll. This ensures the bread is coated without becoming too soggy, which helps maintain the roll-up shape during cooking.

  • When cooking French toast, people tend to soak the bread for too long.

  • To ensure your French toast roll-ups aren't soggy, use thick bread and flatten it thoroughly before rolling. Dip the bread rolls quickly in the egg mixture, just long enough to coat them (no more than 10 seconds per roll). Cook them over medium-high heat to achieve a crispy exterior while keeping the inside just right.
